Leek Soup


As you may have read in my previous post, I am trying to get rid of cellulite which has started appearing on my thighs and bum. Part of my plan involves making and eating veggie-rich soups.
Here is my recipe for my Leek Soup:

Ingredients: (makes about 6 serves)
1 small onion, diced
1-2 cloves of garlic, diced
1-2 tbsp. extra virgin olive oil
3 leeks
2-3 carrots
1/2 - 1 zucchini
2 potatoes
water or chicken/veg stock

Method:
Add oil, onion and garlic to a large pot on low heat
Chop leeks, carrots, zucchini and potatoes and add to pot
Cover veggies with water or stock (if using water, add a little powdered stock for flavour)
Allow to simmer for about 30mins
Add to a food processor and mix until smooth
Enjoy!
